colorとhueはいずれも「色」と訳されますが、hueは”色相”の訳も当てられるように微妙に違う点もあります。

color
「色」を意味する一般的な語。色相・明度・彩度の三属性によって定義される。
 
hue（文語）
shadeの意味で使われることもある。
 
shade
一つの色の異なる色合い。
 
tint
shadeとほぼ同義だが専ら淡色についていう。
 
tinge
全体に少し混じっている色。

colour
1 the quality in objects which allows the eyes to see the difference between a red flower and a blue flower when both are the same size and shape.

2 red, blue, green, black, brown, yellow, white, etc.

英語類義語活用辞典の解説

colorは赤、青、黄など単色を指しますが、hueは同じ色でも明るさ、または暗さの度合いを言う時に使います。
 
What color is your car？
（あなたの車は何色ですか？）
 
What color did you paint your house？
（あなたは家を何色に塗ったのですか？）
 
The diamond shone with every hue under the sun.
（ダイヤはプリズムのあらゆる色の光彩を放った）

colorとhueのこの相違は比喩にも使われます。
 
colorのほうが多義に用いられ、活き活きした、精彩に富むなど良い意味に例えられます。
 
一方でhueは外から識別できる流派の意味に使います。
