assent、agree、consentはいずれも「同意する」と訳されますが、語の含みには明確に違いがあるようです。

英語類義語活用辞典の解説

assentは「そうですね」と相手の発言に反対しない、この３つの中では最も受け身で、漠然とした語です。
 
She assented to the doctor’s remark that she was very ill but she refused to be hospitalized.
（あなたの病状は深刻だという医師の指摘に彼女は同意したが、入院は拒否した）
 
He assented to his wife’s plans for vacation but he did not do anything about it.
（奥さんの休暇プランに彼は同意したが、具体的にな行動は何も起こさなかった）
 

 
agreeはassentよりも具体性・積極性があり、assentほど形式ばっていないので口語にも用いられます。
 
agreeの後に続くのが行動ならto、人ならwith、一般的な方針ならon（またはupon）を伴います。
 
They agreed to abide by the interpretaion of the court.
（裁判官の解釈に従うことで双方が合意した）
 
I agree with you there.
（その点はあなたに同意します）
 
They agreed on an equal division of profits.
（利益は等分することで合意した）
 
agreeは上のような具体的契約以外にも、「和」や「調和」といった漠然とした意味に使うこともあります。これはassentやconsentにはない特徴です。
 
The climate must agree with you. You look very well.
（ここの気候はあなたに合うようですね。とてもお元気そうです）
 
consentには、assentやagreeにはない”give permission”の意味があり、「立場が上の者から下の者への同意」の含意があります。
 
My boss consented to give me a three-day leave.
（上司が三日間の休暇を許可してくれた）
